Ingredients

  • 1.8kg Lilydale Free Range Whole Chicken
  • 5 garlic cloves (crushed)
  • 1 sprig rosemary
  • ½ cup olive oil
  • 1 lemon
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 2 teaspoons salt

Method

  1. Season chicken with salt (1 teaspoon)
  2. Tuck rosemary sprigs into chicken; set chicken aside
     

Marinade:

  1. Crush garlic cloves, add to jar
  2. Pour ½ cup olive oil into jar
  3. Ground cayenne pepper, add to jar
  4. Add 1 teaspoon of salt to jar
  5. Add 1 teaspoon paprika to jar
  6. Squeeze lemon, pour lemon juice into jar
  7. Shake jar to mix ingredients
  8. Pour half of jar marinade over chicken
  9. Grill chicken on medium heat (about 15 minutes)
  10. Baste chicken with leftover marinade
  11. Flip and grill on medium heat (about 25 minutes)
  12. Serve (with grilled corn, sprouts and your favourite brew)
