Charred Broccolini w/ Goat’s Cheese Sauce

This is one of those moorish side salads that you just won’t want to stop eating. Crisp, crunchy with a nice zing from the yoghurt sauce.


  • 2 bunches broccolini, trimmed
  • 2 tbs Cobram Estate Extra Virgin Olive Oil
  • Sea salt, to taste


  • 1/4 cup (90g) goats cheese
  • 1 cup Greek-style yoghurt
  • 1 tbs olive oil
  • Zest, 1 lemon


  • 2 tbs Cobram Estate Extra Virgin Olive Oil
  • 1 lemon, juiced
  • 1/4 cup pistachios, toasted and roughly chopped
  • 1/2 cup parsley, roughly chopped 
  • Sea salt and pepper, to taste


  1. Preheat BBQ to high heat. Toss broccolini through olive oil and sea salt, grill for 3-5mins,  turning once or until lightly charred. 
  2. While the broccolini is cooking, make the yoghurt goat’s cheese sauce. Combine the goat’s cheese, yoghurt, olive oil, and lemon zest until you have a smooth sauce. Season to taste.
  3. To serve, spread a layer of the goats cheese sauce on the bottom of a serving plate or shallow bowl, top with broccolini, drizzle with extra virgin olive oil, lemon juice and garnish with pistachios, parsley and season with salt and pepper.
